Chocolate Layer:

  • 1 cup sugar-free chocolate chips (Lily's or ChocZero)
  • 2 Tbsp. coconut oil or butter

 Krispy Layer:

  • 1 cup finely crushed pork rinds (unflavored)
  • 2 Tbsp. ground flaxseed or chia seed (optional, for binding)
  • 2 Tbsp. butter or coconut oil (melted)
  • 2 Tbsp. Gentle Sweet or allulose (or 1 Tbsp. Super Sweet)
  • 1/4 tsp. vanilla extract
  • pinch of salt

 

 Instructions:

Chocolate Layer: Melt the chocolate chips and coconut oil (or butter) in a microwave-safe bowl in 30-second increments, stirring between each session, until smooth. Alternatively, melt the chocolate in a double boiler on the stove.

 Krispy Layer: In a mixing bowl, combine crushed pork rinds, ground flaxseed (if using), Gentle Sweet, and a pinch of salt. Stir in the melted butter and vanilla extract. Mix until the texture is crumbly but holds together when pressed.

 Assemble: Line a small loaf pan or square dish with parchment paper. Spread a thin layer of melted chocolate on the bottom of the pan and place it in the freezer for 5–10 minutes to set. Once the chocolate is firm, press the krispy mixture on top, forming an even layer. Pour the remaining melted chocolate over the top, spreading it evenly to cover the krispy layer.

 Place the pan in the freezer for 30 minutes or until completely firm. Once set, remove from the pan and cut into small, bar-sized pieces. Store in an airtight container in the refrigerator or freezer to maintain the crisp texture.
