Fermenting Carrots
Tools you will need:
Fermentation Lids (MasonTops Kit available here)
Fermentation weights, Also MasonTops.
2-4 Jars – you can use any size of wide mouth jar. Beginners use Quart or Pint, Large families may want to ferment in ½ gallon jar.
Salt: non-iodized, real mineral salt
Filtered water- I love my Berkey Water Filter! If you don’t have a good filter, draw your water out the night before and the chlorine will evaporate overnight.
Knife
Cutting board
1 pound of whole carrots
4 tablespoons salt
Optional seasonings, red pepper flakes, garlic, mustard seeds.
Fermented Cabbage/sauerkraut:
LARGE bowl/dishpan or stock pot.
Wooden spoon for mashing
Jars & lids, same as above
Knife/cutting board or food processor with a blade or box grater.
2-3 # head of cabbage (Drive Thru Sue option, two to three bags of cabbage shreds/cole slaw mix). PLEASE HAVE SHREDDED PRIOR TO CLASS
2 T of salt
Milk Kefir
Supplies:
Quart jars
fine mesh strainer
Milk (whole for a THM S, Skim for THM FP) (can be raw, pasteurized or homogenized, just not Ultra-Pasteurized. (UHT))
1-2 T milk kefir grains.
