Mango Cheesecake Cups

Makes 2 servings.

 

For the crust:

  • 2 Wasa crackers
  • 1 Tbsp. Brown Swerve
  • 1 Tbsp. pecans
  • 1 tsp. vanilla
  • ½ tsp. cinnamon

Pulse gently in your Ninja Chopper. You want the crust to be a little coarse.

Saving some crumbs for toppings, divide the crust into two containers.

 

For the cheesecake:

  • 1 ½ cups cottage cheese
  • ¼  cup THM optimized vanilla whey
  • 1 Tbsp. psyllium

Wash out your Ninja Chopper and mix up the cheesecake ingredients. (Your Chopper will be extremely full; you may want to use a full-sized blender...) Mix well. Add:

  • one mango, cut into chunks (you can save out a few chunks for a topping)

Mix well. Spoon into your containers on top of the crusts. You can chill them or eat them right away.
