Cooking with KJ: Mexican Night (REPLAY ONLY)

We will make Chimichangas, Spanish Rice and Sopapilla Cheesecake!

Ingredients Needed:

 

Chimichangas:

  • 3 cups cooked, shredded chicken
  • 4 ounces cream cheese (DF if you choose)
  • 1 (4 ounce) can green chiles
  • 1/4 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon garlic salt
  • 1 1/2 cup shredded cheddar cheese (or DF like zucheesey!)
  • 6 large Mission Low Carb Tortillas - preferably the burrito size whole wheat, but just get the largest you can
  • Coconut oil for frying

 

Spanish "Rice":

  • 1 large bag or 1 small of frozen cauliflower rice
  • 1 tbsp coconut oil
  • 1/2 cup diced onion
  • 3 cloves garlic minced
  • 1 tsp cumin
  • 1/2 tsp salt + more to taste
  • 2 tbsp tomato paste
  • 1/4 – 1/2 cup chicken or vegetable broth
  • Fresh cilantro for garnish (optional)
  • Fresh lime juice for garnish (Optional)

Sopapilla Cheesecake:

Ingredients for the crust:

  • 3 large - 8 inch Mission low carb Tortillas 
  • 2 tablespoons melted butter
  • 2 tbs cinnamon
  • 2 tbs erythritol or 1 tbs super sweet

Ingredients for the filling:

  • 1 1/2 packages of low fat or regular cream cheese (12 oz) or DF cream cheese
  • 1 teaspoon vanilla extract
  • 1/3 cup Gentle Sweet or
  • 3 to 4 tablespoons Super Sweet

You'll need kitchen basics - stovetop/oven, pan, bowls, knives, spoons.  You CAN use an air fryer if you choose.
