INGREDIENTS:

Bacon, Gouda & Pumpkin Souffle:

  •  6 slices bacon, cooked & chopped
  •  ½ yellow onion, chopped fine
  •  3 lg eggs, separated (3 yolks & 3 whites)
  • 1/4 cup shredded gouda (or other cheese of choice)
  •  ¾ cup canned pumpkin, unsweetened kind
  •  ½ cup heavy cream
  •  ½ tsp dried rosemary
  •  ½ teaspoon sea salt
  •  ½ teaspoon black pepper
  •  ¼ teaspoon ground nutmeg
  •  ⅛ tsp ground sage
  •  ⅛ tsp cream of tartar *optional
  •  9 inch pie pan

 

Pumpkin Roll

  •  1 cup Almond Flour
  •  4 T Butter, melted (sub Ghee for Dairy Free)
  •  3 Eggs
  •  ¼ cup Psyllium Husk Powder
  •  1/2 cup Pureed Pumpkin
  •  1 tsp. Pumpkin Pie Spice
  •  ¼ cup Coconut Cream
  •  ¼ cup Sour Cream (sub Kite Hill Yogurt for DF)
  •  ¼ cup THM Gentle Sweet (or favorite powdered sweetener)
  •  1 tsp. Vanilla
  •  1 tsp. Baking Powder
  •  8 oz Cream Cheese (sub Kite Hill for Dairy Free)
  •  8 T Butter (sub Ghee for Dairy Free)
  •  ¼ cup Sour Cream
  •  ¼ cup THM Gentle Sweet (or favorite powdered sweetener)
  •  ¼ tsp. Liquid Stevia (can use powdered)
  •  1 tsp. Vanilla Extract
