These recipes are:

INGREDIENTS NEEDED:
**Substitutions have not been tested
Cookies:
- 1/2 cup Black Cocoa (Yes, you can use plain cocoa but BLACK COCOA is what makes these taste like Oreos)
- 1/2 cup Coconut Flour
- 1/2 tsp Xanthan Gum
- 1/4 tsp Baking Soda
- Generous pinch of Salt
- 1 stick Unsalted Butter (room temperature)
- 3 Tbsp Carton Egg whites (or one fresh)
- Splash of Vanilla
- 1/2 cup THM Gentle Sweet or 3/4 cup Erythritol
- 2+Tbsp Water
Filling:
- ½ cup + 1 Tbsp. Coconut oil
- 3 Tbsp Gentle Sweet or powdered Swerve
Supplies needed:
- (Optional) Oreo Cookie Pan (available https://www.amazon.com/shop/joyfullifewithkj under "Classes")
- (If not using pan) 2 inch circle biscuit/cookie cutter (scalloped edges make a pretty cookie)
