Spring Picnic Mini Quiches

(Crustless)

  • 6 large eggs (or egg whites, if preferred)
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 1/2 cup diced bell pepper
  • 1/2 cup spinach, chopped (or a vegetable of your choice)
  • 1/4 cup diced turkey sausage or ham (optional for extra protein)
  • Salt and pepper to taste

Preheat oven to 350°F. Grease a 12-cup muffin tin or use silicon muffin cups.

In a bowl, whisk eggs, cottage cheese, cheddar, bell pepper, spinach, sausage (if using), salt, and pepper. Pour the mixture evenly into the muffin tin.

Bake for 20-25 minutes, or until quiches are set. A knife should come out clean. Serve warm or pack for a protein-filled, portable snack!
