Summer BBQ Chicken Lettuce Wraps

with Creamy Coleslaw

Chicken Lettuce Wraps Ingredients:

  • 1 lb. boneless, skinless chicken breasts, cooked and shredded
  • 1/4 cup sugar-free BBQ sauce (see recipe below)
  • butter or romaine lettuce leaves

Creamy Coleslaw Ingredients:

  • 2 cups shredded cabbage mix
  • 1/4 cup plain Greek yogurt
  • 1 Tbsp. apple cider vinegar
  • stevia or Gentle Sweet to taste
  • salt and pepper to taste

Instructions:

In a bowl, toss shredded chicken with BBQ sauce until well-coated.

Mix cabbage, Greek yogurt, apple cider vinegar, sweetener, salt, and pepper to create the coleslaw. Serve BBQ chicken in the lettuce wraps, topped with a spoonful of coleslaw.

BBQ Sauce Ingredients:

  • 1 cup tomato sauce (no sugar added)
  • 1/4 cup apple cider vinegar
  • 2 Tbsp. tomato paste
  • 2 Tsp. Worcestershire sauce (sugar-free)
  • 1 Tbsp. yellow mustard
  • 1 Tbsp. smoked paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. salt (or to taste)
  • 1/4 tsp. black pepper
  • 1/4 tsp. liquid stevia or 1-2 tbsp Gentle Sweet (adjust to taste for sweetness)

Instructions:

In a medium saucepan, combine all ingredients and stir well. Bring the mixture to a simmer over medium heat. Reduce heat to low and let simmer for 15-20 minutes, stirring occasionally until thickened. Taste and adjust sweetness or salt as needed. Allow to cool, then transfer to a jar or container. Store in the fridge for up to 1 week.

This BBQ sauce is delicious on chicken, burgers, or as a dipping sauce, with no added sugar!
